Colorful Coleslaw (Healthy Start Kid's Cookbook)
Maybe you think you don’t like cabbage. Here’s a really tasty treat. If you make this, your whole family will eat it all up.
2 cups Shredded carrots (about 4 to 6 medium carrots)
2 cups Shredded red cabbage (about 1 small head)
¼ tsp. Orange peel
1 (6-oz.) Container low-fat orange or lemon yogurt
1/8 tsp. Salt
6 Tbsp. Unsalted, dry-roasted peanuts
½ cup Mandarin orange sections in light syrup, drained

1. Place the shredded carrots and cabbage in a medium-sized bowl. Use your hands (be sure they are clean) to mix these together thoroughly. (You’ll want to wash you hands again after you do this.)
2. To get the orange peel, use a grater and rub an orange against the smallest holes to get very tiny pieces of range peeling. Measure ¼ teaspoon of the grated orange rind into a small bowl.
3. Add the yogurt and the salt to the bowl with the orange rind. Stir these together very well, using a wooden spoon.
4. Add the yogurt mixture to the carrot-cabbage mixture and stir very well to mix thoroughly.
5. Add the peanuts. Stir until everything is well mixed.
6. Drain the mandarin orange sections in a colander. Measure out ½ cup and add these to the bowl. Gently mix the orange sections in using a rubber spatula. Be careful because you don’t want the orange pieces to break.

Your slaw-style salad is ready to serve, or you can make this ahead of time and put it in the refrigerator. Use plastic wrap to cover the bowl.

Fruit Fling (Healthy Start Kid's Cookbook)
You can make this the night before and have it in the refrigerator so it is ready when you are. It’s a great way to start the day.

20-oz. Can Pineapple chunks, strained
1 cup Grapes, washed
2 Bananas, peeled and sliced
1 Red apple, peeled and chopped
1 Orange, peeled and cut into bite-sized pieces
1 tsp. Lemon juice

1. Find a large bowl with a tight-fitting lid. Pour the pineapple chunks and the grapes into the bowl.
2. Add the slices of bananas, chopped apple, orange pieces, and lemon juice.
3. Put the lid on the bowl. Hold on tightly to the bowl and lid and gently tip the bowl upside down and back, mixing the fruit all up. Tip the bowl 3 more times.
4. Spoon 1 cup of the mixture into a small bowl and eat. If there is any left, you can keep it in your refrigerator in a covered bowl. It will keep for 1 or 2 days.
